Our Papada, a Spanish version of Guanciale or Bath Chaps, is Mangalitsa pork jowl and cheek cured in a complex, carefully balanced blend of herbs and spices. Ideal for authentic carbonara or fry up slices as soldiers with soft-boiled duck eggs for an indulgent brunch.
